Description
As the subject states could we add egress interface within the firewall logs?
There is a column for ingress and another for egress.
This way, it will confirm how the connection flows transit the firewall along with showing that routing is good. This would be especially useful for multiple interfaces (logical or physical) on the firewall.

The log entries have no concept of anything other than the interface which triggered the rule and trying to calculate that for each rule isn't viable either.
If you want to log egress, setup your own floating rule outbound on whichever interfaces you're interested in to pass traffic with logging enabled.
