ever since 1.222.0 of unbound it has supported DNS over QUIC https://unbound.docs.nlnetlabs.nl/en/latest/topics/privacy/dns-over-quic.html
and DNS over HTTPS
https://unbound.docs.nlnetlabs.nl/en/latest/topics/privacy/dns-over-https.html
but i don't any options in the UI to enable it or change the settings in the UI. I've not ventured into the CLI to determine if it would work out of the box.

edit: looking at the https, its only via http/2 so wouldn't offer any meaningful gains.
dns over quic would though
