Description
The GUI offers two ways to delete an interface mapping on the Interfaces tab of Suricata.
Clicking the trashcan icon in the Actions column will bring up an alert asking the user to confirm whether to delete the interface, but clicking OK just causes the page to reload and the interface mapping will still exist. Selecting the interface with the checkbox and clicking the Delete button beneath the main table will successfully remove the interface mapping.

Attempting to delete interfaces using the trashcan icon produces system logs:
Dec 7 00:18:47 php-fpm 351 /index.php: Successful login for user 'admin' from: 172.21.16.5 (Local Database) Dec 7 00:19:20 php-fpm 351 Stopping Suricata on (ix0) due to Suricata instance deletion... Dec 7 00:19:20 php-fpm 351 Deleted Suricata instance on (ix0) per user request... Dec 7 00:19:20 check_reload_status Syncing firewall Dec 7 00:19:33 kernel ix0: promiscuous mode enabled Dec 7 00:19:33 php-fpm 350 Stopping Suricata on (lagg0) due to Suricata instance deletion... Dec 7 00:19:33 php-fpm 350 Deleted Suricata instance on (lagg0) per user request... Dec 7 00:19:33 check_reload_status Syncing firewall
The interfaces are not actually removed. The services are not stopped.
